Lemon Poppy Seed Muffins

My oh my! I absolutely love lemon poppy seed muffins. They always remind me of the beginning of Spring. These muffins are bright, zesty and delicious. I like to make these on Saturday mornings and have them around the kitchen all weekend long. They are great with a cup of coffee, or an afternoon snack. The ingredient list can seem a littleeeee overwhelming, but do not fret. As long as you read the instructions, and lay out all of your measured items before you begin to keep you organized, you will have a great time with this recipe. The lemon juice and zest with the aroma of the almond extract will make your kitchen smell lovely and excite you to finish the recipe. You may find some common lemon poppy seed recipes are served with a glaze to apply after baking. For me and my family, we do not opt for the glaze. First, my kids will get everything sticky with it, ha! Second, we do not eat all the muffins at once, so I find that the glaze on the muffins does not keep well over the span of a few days. So, my recipe does not include a glaze.
