Beef enchiladas are incredibly easy to make, making them a perfect go-to meal for busy nights. I like to add black beans for an extra boost of protein, but they can easily be left out if you’re not a fan of beans. This recipe is super flexible, too—it’s easy to double if you’re feeding a crowd or want to make an extra batch to freeze for later.
